“Estonian” fried cheese balls

From Tallinn, Estonia and the best cheese balls ever

Ingredients

  • 2 cups grated havarti cheese*
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1clove garlic, minced
  • salt and pepper
  • Canola oil for frying

*the Estonian recipe calls for a cheese called Eesti Juust, if you can find this in North America, definitely use it! Havarti is a reasonable substitute.

Dipping Sauce:

  • 2/3 cup balkan yogourt*
  • 1/3 cup mayonnaise
  • 1 clove garlic, minced
  • 1/4 cup dill, minced
  • salt and pepper

*the Estonian recipe calls for sour cream, but I prefer yogourt. You can use either.

Preparation

Mix all ingredients for cheese balls together in a bowl and shape into 1 inch balls. Coat with a little flour. Deep fry in hot oil for about 10 minutes. Fry in small batches, they will come out crispier!

Dipping sauce: mix all ingredients together in a bowl and set aside until cheese balls are ready. If possible, make ahead and chill so that all the flavours mingle longer.
