“Spinotta” pizza a la Soph n’ Stuff

From A study in spinotta

(Based on Pizzaiolo‘s recipe)


  • 1 recipe pizza dough
  • 4 cups raw baby spinach leaves (washed and dried)
  • 1/2 cup shredded mozzarella cheese
  • 2 tsp italian seasoning
  • 1 tsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup ricotta cheese


In a bowl, combine italian seasoning, olive oil and tomatoes. Toss to coat.

Preheat oven to 425° F. Prepare the pizza dough and pre-bake it in the oven for 10-11 minutes.

Sprinkle mozzarella cheese onto baked pizza crust, then spinach. Top with tomatoes and big dollops of the ricotta cheese.

Bake in the oven another 10 minutes, until spinach has wilted and the cheese is melted and bubbly.
