From Turkey burgers with spinach, cranberry mayo and jalapeno havarti

Turkey burgers

Ingredients

  • 1 lb lean ground turkey
  • 2 cloves garlic, smushed through a garlic press
  • 1 tbsp dired parsely
  • 1/2 tsp salt
  • pepper to taste
Cranberry mayo
  • 1/2 cup home-made or store bought mayo
  • 1/4 cup dried cranberries
  • 1/2 tbsp grated shallot
  • 1/2 tsp salt
  • pepper to taste

Preparation

In a bowl, mix everything together until it is evenly combined. Form into burger patties. Cook on a bbq or grill pan, 3-4 minutes each side until cooked through.
For the cranberry mayo: in a small bowl, soak the dried cranberries in enough water to cover for about 30 minutes. Strain, then finely chop the cranberries. Add shallot, mayo, salt and pepper and stir to combine.
Spread some of the cranberry mayo on the bun of your choice (I used pretzel buns!), and place the turkey burger on top. Top with jalapeno havarti and raw baby spinach, or other toppings of your choice!
