From Huevos Rancheros
Ingredients
(Serves 4)
- 4 corn tortillas
- 1/2 cup refried black beans
- 2 cups salsa
- 8 eggs
- 2 cups grated cheddar or monterey jack cheese
Preparation
Preheat oven to 400 F. In 4 lightly oiled ramekins, fit corn tortillas so that they form kind of a bowl shape. Spread equal amounts of refried beans inside each tortilla, and spoon about a tbsp of salsa over the beans. Top with grated cheese. Bake in oven 10-12 minutes or until cheese is bubbly and brown.
Meanwhile, in a skillet, heat a bit of oil over medium-high heat. Add a few spoonfuls of the salsa, then crack the eggs into the salsa, keeping the eggs in pairs, more or less. Cook 5 minutes without flipping. The eggs will be just slightly underdone – this is ok as you will be baking them next.
Remove the ramekins from the oven, and scoop eggs on top of the baked cheese. Spoon more salsa on top of the eggs, and top with remaining cheese. Put back into oven for about 10 minutes, until top layer of cheese is bubbly and melted.
Remove from oven and serve with guacamole, salsa verde and roasted mini potatoes.
