- 1 28 oz can hominy, drained and rinsed
- 1 cup cooked macaroni (optional)
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 cup milk
- 1 cup grated cheddar cheese
- salt and pepper to taste
In a saucepan, melt butter over medium heat. When it sizzles, add flour and whisk for 1-2 minutes, until it becomes bubbly and golden. Slowly pour in milk, whisking the entire time, and continue stirring until the milk heats up and thickens. Add the grated cheese and stir until it is melted. Add the hominy and optional macaroni, if using, and stir to coat well. Serve immediately.
