From Oregano Eggs
(Adapted from Epicurious)
- 2 tbsp good olive oil
- 8 eggs
- salt and pepper
- 1 tsp fresh oregano leaves
- 1/4 cup freshly grated parmesan cheese
In a non-stick skillet, and before placing it on the stove top, swirl the olive oil around the pan. Crack each egg into a small bowl, then tip into the cold pan. Sprinkle salt, pepper, oregano leaves and parmesan cheese over the eggs. Cover the skillet and turn the heat on to medium low. Cook for 7-8 minutes until the whites are set and until the yolks are cooked to your liking.
Serve with italian bread, maybe a small arugula salad or prosciutto! Or the eggs are quite satisfying on their own with good toast.
