Yuca with lemon and garlic

Ingredients

  • 1 large yuca (cassava) root, peeled and cut into 1 inch cubes
  • 1 tsp salt
  • 3-4 cups water
  • 1/4 cup olive oil
  • 3 cloves garlic
  • 1/2 white onion
  • juice of 1 lemon

Preparation

In a saucepot, place yuca in salted water and bring to a boil. Cover and cook about 15 minutes, until tender. Drain yuca and set aside. In a skillet, sautee onion and garlic in olive oil for about 5 minutes until translucent. Add lemon juice, then pour the mixture over the yuca. Season to taste and serve.
