From Blueberry Salsa
Ingredients:
2 cups blueberries, coarsely chopped
1/2 medium red onion, minced
1 jalapeno pepper, seeded and chopped (I actually used a bird chili, because I thought I had jalapenos but in fact did not)
1/2 red bell pepper, diced
Handful of fresh cilantro, chopped
Juice of half a lime
1/2 tsp ground cumin
salt & pepper to taste
Preparation:
In a medium bowl, combine the chopped blueberries and the remaining ingredients. Cover and let stand for one hour to blend flavours. Serve with tortilla chips.
