Spinach and artochoke dip pizza

Ingredients

  • 1 recipe whole wheat pizza dough
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 1 cup canned artichoke hearts, diced
  • 4 cups fresh baby spinach

Preparation

Preheat oven to 425 F. Roll out your pizza dough and place it on an oiled pizza pan. In a saucepan, heat the olive oil and garlic over low heat for about 10 minutes. You want the oil to become infused with garlic flavour, not to cook the garlic – don’t let it brown! Brush the garlic oil over the pizza dough. Sprinkle the mozzarella cheese on, then the spinach, then the artichoke hearts. Finally, top with the parmesan cheese. Bake in the oven for 20-25 minutes, or until the cheese is browned and bubbly.
