From Burgers with maple glazed bacon, chipotle-caramelized onions and white cheddar

Ingredients (makes 12 buns)
- 1 cup milk
- 1/2 cup water
- 1/4 cup butter
- 4 1/2 cups all-purpose flour
- 1 (.25 ounce) package dry yeast
- 2 tablespoons white sugar
- 1 1/2 teaspoons salt
- 2 eggs (1 beaten slightly)
- 1/4 cup sesame seeds
Preparation
In a small saucepan, heat milk, water and butter until very warm, 120 F, then remove from heat and add to a bowl. Dissolve the yeast into the milk mixture. Wait 10 minutes, until the yeast is bubbly. In a stand-up mixer bowl, mix together 1 3/4 cup flour, sugar and salt. Mix milk mixture into flour mixture, and then mix in 1 egg. Add the remaining flour, 1/2 cup at a time, mixing with the dough hook attachment well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 1 minute. Place in a greased bowl, cover, and allow to rise in a warm place for about 1 hour.
Punch down dough and knead for a couple of minutes. Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes. Before baking, brush beaten egg over the surface of the buns and sprinkle sesame seeds evenly on top.
Bake at 400 F for 10 to 12 minutes, or until golden brown.
