Chipotle-caramelized onions

From Burgers with maple glazed bacon, chipotle-caramelized onions and white cheddar

Cheeseburgers

Ingredients

  • 1/2 tbsp butter
  • 1/2 tbsp olive oil
  • 1 sweet yellow onion, peeled and thinly sliced
  • 1 chipotle pepper in adobo sauce, diced
  • 1 tbsp hot water
  • 1 tsp honey
  • 1/2 cup mayo (optional), to make a condiment spread

Preparation

In a saucepan, heat butter and oil over medium heat. Add onions. When they begin to sizzle, reduce heat slightly. Cook for 10 minutes until tender and golden but not brown. Add chipotle and hot water and cook until water is evaporated. Add honey and cook for 2-3 minutes more, until the mixture is sticky and golden brown.

Remove from heat and let cool to room temperature. You can either use the onions as a topping, or add to mayo to make a spread.
