From French onion soup grilled cheese
Ingredients
(for two sandwiches)
- 4 slices of a good hearty bread such as light rye
- 8 slices monterey jack cheese
- 2 tbsp slow cooker caramelized onions
- 2 tsp softened butter
Preparation
Heat your skillet to medium-low. Spread butter on one side of each slice of bread. Flip slices over and spread caramelized onions on two slices. Top with cheese slices and remaining bread slices, butter facing out.
Place in skillet with the cheese slices on the bottom. Place another smaller skillet on top of sandwiches to weigh them down a bit. Cook for about 5 minutes, checking occasionally to ensure they are not burning.
Flip and cook another 5 minutes or so. The bread should be uniformly seared a golden brown and the cheese should be melted.
