- 2 lb pork belly
- 4 tbsp brown sugar
- 1 tsp kosher salt
- 4 tbsp maple syrup
- 1/2 cup apple juice
Preheat oven to 275 F. Combine brown sugar and salt in a bowl. Coat all sides of pork belly with sugar mixture and place in casserole dish. Reserve any remaining sugar. Pour in apple juice. Bake uncovered for 2 hours in preheated oven. (I did this part the day before)
Increase oven temperature to 375 F. Remove outer layer of skin from pork belly. Cut into 1 inch pieces, and coat on all sides with more brown sugar mixture, then dredge well in maple syrup. Bake for 15 minutes in preheated oven until the the maple syrup is caramelized.
