Ricotta Sage Cream Sauce

From A week of make-ahead meals: Day 3: Sausage ravioli with ricotta sage sauce

Ingredients

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1-2 tbsp (depending on your preference) fresh sage leaves, julienned
  • 1/2 cup milk
  • 1/2 cup ricotta cheese
  • dash of nutmeg (optional)
  • salt and pepper to taste

Preparation

In a saucepan, melt butter with sage over medium heat until it bubbles. Add flour and whisk, forming a roux. When it is smooth, add the milk and whisk until smooth. Add ricotta and stir well to incorporate. Add nutmeg if desired, and season with salt and pepper.
