1 recipe pizza dough, either white or whole wheat
1 duck breast
1/4 cup maple syrup
2 tbsp apple cider vinegar
2 tbsp brown sugar
1 tsp coarse salt
1/4 cup water or chicken stock
1/4 cup goat cheese
handful of wild leeks (about 10-12 leaves), the stringy roots removed
1/4 cup freshly grated parmesan cheese
Preheat oven to 300 F. In a bowl, combine maple syrup, apple cider vinegar, brown sugar, salt and water. Place duck breast in an oven proof dish (I used a loaf pan which was the perfect size), and pour over the maple syrup mixture. Cover and braise for 2 hours, until duck is tender and comes apart easily with a fork. Remove the duck skin, and using two forks, pull apart the breast meat into small pieces (just like pulled pork).
Increase oven temperature to 425 F. Roll out the pizza dough and place on a baking sheet. Brush dough with olive oil, and poke it all over with a fork. Bake in the preheated oven for 10-12 minutes.
Remove the dough from the oven and spread the goat cheese over the whole surface. Top with duck, and arrange the leeks overtop. Sprinkle with parmesan cheese.
Bake for another 10-12 minutes in the oven until the cheese is bubbly and browned. Remove from the oven and let the pizza rest for 3-4 minutes before serving.
