Home-made blender mayonnaise

Ingredients

  • 1 whole egg
  • 1 tbsp water
  • 1 tsp dijon mustard
  • juice of 1/2 a lemon
  • 1 cup canola or olive oil
  • 1/2 tsp salt

Preparation

Place all ingredients into a mason jar or similar shaped dish. Using an immersion blender, blend until mixture thickens, about 1 minute.

This will keep in the fridge for 5-6 days, depending on the freshness of the egg.
