I have updated my pizza dough habits in the last few years. I used to always make a quick and easy thin crust. But lately, I have been leaning towards an overnight crust. I make a pizza dough every Sunday and then pop it in the fridge for a fast evening meal later in the week.

The yeast slowly but surely works its magic, even in the fridge. I just take it out and put it on the counter in the morning, for it to rise slowly to room temperature throughout the day.

I find this method produces a crust with a rich and more delicious flavour. It also somehow makes the dough a lot easier to work with. Less elasticky.
