French onion soup grilled cheese

In case you’re wondering, no, I did not accidentally exclude an ampersand (&) from the title of this post. This is not about French Onion Soup and Grilled Cheese.

This post is about the flavours of french onion soup within grilled cheese. A delicious inception of gooey, melty, onioney goodness.

Bread and cheese

I saw this on one of those buzzfeed lists. Something about grilled cheese sandwiches that are better than your boyfriend.

Assembling grilled cheese

While I’m not sure I’d be ready to give up the loyal companionship of one Cheesler, I was certainly prepared to put my new batch of slow cooker caramelized onions to work.

I used a hearty artisan light rye bread. I appreciate a good solid bread for grilled cheese…I hate it when the bread tears apart when you spread butter on it.


And I had a hunk of fancy monterey jack cheese that I thought would go nicely.

The trick with getting the perfect amount of melty goodness in a loaded grilled cheese is to go low and slow. Start with the cheese on the bottom.

Keep your pan at low medium heat and it will cook slowly but uniformly. With time, you will get a nice, brown crunchy sear.
