Quick soba noodle stir fry

Soba noodles have become very popular in North America in recent years, and for good reasons.

1. They are an excellent gluten-free alternative to wheat noodles. They are made of 100% whole grain buckwheat flour.

2. The carbohydrates in soba noodles are of a lower glycemic index value than wheat or rice noodles, because they are whole grain. In other words, they are the “good carbs”. But they don’t have that grainy texture you can sometimes get with whole wheat noodles.

3. They are fantastically delicious, with a light nutty flavour and a satisfying slippery texture – perfect for slurping.

I enjoy cooking soba noodles because they are easy and healthy and really, really tasty. And if you can find them at your local Asian grocery, they can be super cheap! I got a pound for $5 at my favourite place in Guelph.

They complement Asian flavours so well, but can be used in any recipe that calls for a long thin noodle.

I usually keep a bag of frozen uncooked shrimp in the freezer for just this type of occasion, as well as these canned shiitake mushrooms that need almost no cooking time at all.
