Adventures in pasta-making: Spaghetti cacio e pepe

My name is Sophie and I am a pasta addict.


And ever since I started making home-made pasta with my Imperia pasta roller, it has gotten worse.


Sometimes I feel exactly like that episode of Portlandia where the guy tries to quit pasta. But then I remember how good it is and I don’t care.

As a reader of Soph n’ Stuff you will know of my enthusiasm for simple, yet outrageously delicious food. This recipe couldn’t be any simpler, or more delicious.

Cheese and pepper

The name is Italian (obviously) and it means spaghetti with cheese and pepper. And that’s literally all it is! But it’s perfectly cooked, home-made semolina pasta.

And lots of freshly ground black pepper.

And lots of really good, tasty cheese.

Apparently it is the THE DISH you must eat when in Rome. And you know what they say, “when in Rome…”

But you certainly don’t have to be in Rome to make this delightful dish.
