Bacon and egg salad

First, feast your eyes on this. Mmmmm. Bacon. The most delicious part of the pork.


Second, please be advised that bacon and eggs are not just for breakfast anymore.

You can go ahead and have them for lunch, and dinner, too.

And if you like, you can go ahead and just put them right on a salad.

Why not? You are the master of your culinary domain, are you not? The kaiser of your kitchen? The lord of your larder? The princess of your pantry?

Start with some good thick bacon. Bake it in a hot oven, then pat with paper towel and cut into big, chunky – yet – bitesize pieces.

Get some baby spinach. Slice up some mushrooms and some green onions. Toss them all together in a bowl with a very small amount of dijon vinaigrette. Like, a teaspoon at most. I’ll tell you why it should only be a small amount later on.

Now, dig around in your fridge until you find some good cheese. You only need a little. I used some grated Maple-smoked 5 year cheddar I picked up recently at Ouderkirk and Taylor in Guelph. (Have you been to this store? YOU MUST GO.)

Arrange the spinach mixture on the plate and sprinkle the cheese over top. Arrange the bacon pieces evenly across.

Now, get your room temperature eggs ready and a pot of simmering water. Add a dash of white vinegar to the water and drop each egg first into a little bowl, then slide them into the water. Cook for about 3 minutes, until the whites are slightly firm but the yolks are still runny. Remove them from the water with a slotted spoon and set aside in a colander. Baby, you just poached yourself an egg. The final step of this easy meal is to place your lovely poached egg on top of the spinach, and crack open that yolk so it can run all down through the spinach, creating a delicious warm dressing for your salad. Now do you see why you only use a tiny bit of dijon dressing to toss the greens with? This salad dresses itself.
