Well, my friends, you are in for an easy weeknight treat.

As you know well by now, I am obsessed with pizza. I am always trying to figure out how to turn a meal into a pizza. Or better yet, how to use up leftovers via pizza. I despise allowing food to go to waste.

So, when I mentioned to Cheesler that I had some home-made rosemary pizza dough in the fridge just waiting to be shaped and cooked, he suggested that I use the leftover balsamic bbq sauce as the pizza sauce.

I had half a bunch of rapini, and some cherry tomatoes that needed to be eaten too.

It was fate. All I had to do was cook some chicken and I would have a lovely pizza.

Rapini is so easy to cook, and so good for you. The tomatoes are also a breeze to prepare: toss them in some olive oil, salt and pepper and roast in a 400 F oven for 15 minutes. While you’re at it, you could do the same with a skinless boneless chicken breast. Just leave it in for an additional 15-20 minutes.

A few simple steps and you’ll have a delicious and healthy pizza. If you wanted to go uber-low fat you could skip the cheese, but that’s just not gonna happen in my house.
