Wild boar sausage pizza

The last remnants of my recent antipasto adventure were half of a wild boar sausage and a scrap of smoked mozzarella.

The boar sausage is extremely rich. You can only really have a little at a time. It has such a rich, complex flavour, it almost tastes like a strong parmigiano cheese.

I thought it would go perfectly on a pizza with my last little nubbin of smoked mozzarella. I really hope to have a cold smoker at some point in the near future. Just imagine: home-made smoked cheeses!

And Cheesler’s dream is to have a cold smoker for sausage purposes.


To brighten the flavours, I added some onions caramelized with rosemary, apple cider vinegar and honey. You gotta love the sweet and salty combination!

Ready for the oven

Anyway, accompanied by a little salad, this pizza made a great weeknight meal for two. The boar sausage was just enough.
