Chicken parm sandwich, you’re my hero

Through osmosis, I as a Canadian have learned certain American terms that I vaguely understand but don’t really “get”. Such as things like “attorneys”, “congress” and “the war on drugs”. And such as the hero sandwich. It must be an American thing, to call sandwiches heroes.

When I googled “chicken parm sandwich”, the results that came up referred to a chicken parm hero. What the heck is going on, eh? Regardless of the puzzling results, I went ahead and made it. The Chicken Parmesan “Hero” Sandwich.

I breaded the chicken breasts using panko bread crumbs, freshly grated parmesan cheese and dried oregano, then baked them in the oven as a healthier option than frying. The parmesan cheese creates a crunchy, crispy crust on the chicken to emulate a fried breading.

I used slices of fresh mozzarella cheese.

And toasted herb focaccia bread.

Don’t forget the marinara sauce!

Then I sizzled it all under the broiler until the cheese was brown and bubbly.

I have to admit, readers…last night a sandwich saved my life. Serve it alongside a big Elaine-style salad and you’ve got a fine meal, I dare say.
