From Spicy Grilled Shrimp Skewers
Ingredients
- 1/3 cup olive oil
- 1/4 cup sesame oil
- 1/4 cup chopped fresh cilantro
- 2 tablespoons sriracha
- 2 tablespoons minced garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 tablespoons lemon juice
- 1 pound black tiger prawns, deveined but with shell intact
- 12 wooden skewers, soaked in water
Preparation:
Whisk together the olive oil, sesame oil, cilantro, sriracha, minced garlic, salt, pepper, and lemon juice in a mixing bowl. Place the shrimp in a large, resealable plastic bag. Pour in the marinade and seal the bag. Refrigerate for 1 hour. Preheat an outdoor grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Lightly oil grill grate. Cook shrimp for 2 minutes per side until opaque, basting frequently with reserved marinade.

Mt husband and I made these for dinner tonight. It was a bit of a pain to devein the shrimp and keep the shells intact, but in the end, doing so was well worth the effort. These have a nice kick, but the heat is not overpowering.
These were quick, easy and absolutely delicious! Added more sriracha on the side and will probably add more to the marinade next time.
